When you find a soup recipe that works, keep it handy. This butternut squash soup has a great flavor & makes a nice compliment to a salad or a sandwich. This is one of the recipes you'll make on a day when time permits & enjoy the leftovers for several days afterwards.

Additional Info

  • Ingredients:
    1. 1 medium butternut squash, 1.5-2lbs; cut in half, seeded & baked 30-45 minutes
    2. 1/2 medium onion; chopped
    3. 1 Tbsp ground cumin
    4. 1 Tbsp ground coriander
    5. 1 Tbsp ground cinnamon
    6. 2 pints water
    7. 2 chicken or vegetable bouillon cubes; low sodium is an option
  • Directions:
    1. Scoop out inside of cooked butternut squash & chop into approx. 2-3 pieces.
    2. Place squash along with all of the other ingredients in a large sauce pan & cook for 20-30 minutes on medium heat.
    3. Transfer to a large blender or food processor & liquefy.
    4. Pour into individual bowls & serve with a swirl of cinnamon.
    5. Enjoy!
