Mediterranean Chicken & Seafood Recipe

Fresh scallops & tender chicken along with all of the other zesty ingredients makes this a wonderful combination of complimenting flavors.

Additional Info

  • Ingredients:
    1. 2 cups pasta, cooked & strained; tomato or spinach flavored are nice options
    2. 1 pkg boneless skinless chicken tenders; cut into halve size pieces
    3. 1 lb large sea scallops or shrimp; completely thawed if frozen
    4. 1/2 cup extra-virgin olive oil
    5. 1 Tbsp unsalted butter
    6. 1/2 cup sun dried tomatoes; diced tomatoes is also an option
    7. 1/2 cup artichoke hearts; optional
    8. 1 cup chicken stock; we prefer low-sodium
    9. 1/2 cup of white wine; one you enjoy drinking
    10. 2 Tbsp fresh basil; finely chopped
    11. 1 Tbsp lemon zest
    12. saffron; tiny pinch
    13. crushed red pepper flakes; pinch
    14. 1/4 cup Parmigiano Reggiano cheese; regular Parmesan is also an option
    15. sea salt & ground black pepper; to taste, optional
  • Directions:
    1. Cook pasta according to package instructions.
    2. Add all the remaining ingredients except for scallops (or shrimp) to a separate large saute pan, stir well.
    3. Cook chicken all the way through, approx.15-20 minutes.
    4. Add scallops for the last 8 to ten minutes.
    5. Once pasta is cooked, strain & place on serving plates.
    6. Sprinkle with fresh Parmesan-Reggiano cheese, grated or shaved and enjoy along with a warm piece of garlic toast.
