Nana's Italian Eggplant Side Dish Recipe

Nana shares a lot of her delicious recipes with us, she calls this one her "Italian Eggplant Side Dish."

Additional Info

  • Ingredients:
    1. 1 medium eggplant; sliced thin to 2 cups
    2. 1 large stalk of celery; diced
    3. 3 cloves of garlic; minced
    4. 1 can diced tomatoes
    5. 1-4oz can V8 juice; (low sodium)
    6. 1 tbsp Mrs. Dash seasoning; (extra spicy or garlic & herb)
    7. 1 sprig fresh parsley; finely chopped
    8. 3 basil leaves; finely chopped
    9. 1/4 cup parmesan cheese
  • Directions:
    1. Start by sauteing garlic & onion with 2tbs of olive oil in a large skillet.
    2. Add eggplant, celery, diced tomatoes & V8 juice, allow to cook for 20 minutes.
    3. Add parsley, basil & Mrs. Dash.
    4. Cover with water and simmer for additional 10 minutes.
    5. Finish off with parmesan cheese.
    6. Mix all ingredients together and serve as a delicious side dish.
    7. You can easily turn this dish into a meal by adding 2 cups of cooked pasta to it.
