Grilled Squash with Balsamic Drizzle by Sherri "Logan" Williams

I love all types of squash. This is one of my all time favorites. It's quick, easy and darn right delicious. You can grill this inside or outside. The balsamic and honey reduction takes this delightful veggie dish over the top. I hope that you will enjoy. Cooking with Passion, Sherri Williams

  • Ingredients:
    1. 3 Tbsp olive oil, extra virgin
    2. 1 Tbsp dry thyme
    3. salt and pepper, to taste
    4. 3 lg summer squash, quarterd
    5. 3 lg zucchini, quarterd
    6. 4 oz balsamic vinegar
    7. 1 Tbsp honey
  • Directions:
    1.  Mix ingredients1-3
    2.  Brush squash with the olive oil mixture  
    3. On a medium high grill, grill squash for about two minutes on all sides. Remove and set aside.  
    4. In a sauce pan, heat balsamic vinegar and honey.
    5. Reduce until it's a syrup consistency. This will take 4-6 minutes.
    6. Drizzle balsamic syrup on warm squash
